Here’s a simple, fresh appetizer to serve to your guests, or a healthy snack to munch on at home. My family came over for dinner last week and before dinner was served, this bruschetta was completely devoured. I have to admit, it was pretty dang good. Here is the super easy, yet flavorful recipe: 

  • 6 tomatoes on the vine
  • 2 teaspoons of minced garlic
  • 1 tbsp of olive oil
  • 1 tbsp of good balsamic 
  • 1-2 tsps of Italian seasoning (to be honest, I just gave it a few shakes without measuring)
  • About a ¼ cup of freshly grated parmesan cheese
  • Small handful of freshly torn basil leaves 
  • Add salt or pepper to taste
